Deep ruby in colour with aromas of cherry and plum, creamy flavours of dark cherry with a savoury spicy complexity and a smooth velvety richness. Enjoy – Salute!

The 2019 Bendigo growing season started off with a cool spring, with above average rainfall, followed by a warm summer which produced low yields of concentrated fruit.

The fruit was hand harvested mid-March, 100% de-stemmed followed by a long cold maceration, fermented slowly and gently pressed. It has been aged in French oak barriques, of which 25% were new for 10 months.

Drink/Cellar: Now until 2027

Serve with beef, stuffed eggplant, rich tomato/mushroom based recipes, pork and lamb dishes.
